Dutch Oven Recipes

OK..Here is the deal...I am very much a rookie with the dutch oven but am going on some hunts and want to learn to use it.

I want to start a dish before I leave for the afternoon hunt and and have it done and ready to eat when I get back. My oven is a 12" and my usual group is 4 guys.

What you got???

Keith,

The absolute best meal I ever had was a rabbit..a big arctic hare...cut up like a chicken, chopped carrots, celery, onion, potato, salt and pepper, parsley flakes, a cup of red wine, and a can of peeled stewed tomatoes, and a bunch of cold arctic lake water.

He started with a little butter, and browned off the meat in the bottom while the coals were getting on good, then stuck everything else in, covered the top with some coals, and off we went.

5 hours later we returned to some of the finest vittles I have ever tasted..I don't know if it was me being hungry...but that whole oven full of food was gone in a flash..the plates were cleaned, and the faces showed everyone felt the same as me about the results!

I have done a simularly as Ray Hammond suggested, if you have a stew or chilli that you like it can be cooked in the same way. A neat trick is to make a chicken soup (or squirrel, rabbit, grouse, whatever) then before putting the lid on, scoop in a bunch of biscuit batter on top of the soup. Cover and cook normaly, when done you will have soup and dumplings!

For 4 "eaters", I'd take 2 pounds of stew meat, and as many cubed red potatoes, carrots, and onions to fill your dutch oven. I then cheat by useing 2 heaping tablespoons of the prechopped garlic you can get at grocery stores. Stir this well, then add a generous layer of your favorite seasonings to the top (I use a mix of granulated garlic, minced onion, kosher salt, coarse ground black pepper, and rubbed sage). Then crush 2 beef bullion cubes in 3/4 cup of water, and add 2 tablespoons of A-1. Pour this over the top and cook. I don't like to add much water because I don't want the veggies too mushy. This way, there's just enough steam to make the insides of the taters soft, but by the time it's done cooking, they're still just firm on the outside. Add more beef broth when done cooking to make a nice gravy. Goes excellent with biscuits.

Throw all these items in and put the heat on.

Cabbage, Potatoes, Green Beans, Sweet Corn, Green onions and Some type of smoked sausage or summer sausage.   I also add about a pound or two of ground meat.   Add some salt, pepper, cayenne pepper.  
   Let it cook until the potatoes are done.

Country style ribs are a favorite around my camp.
Brown the ribs in your dutch oven on all sides. Pour off the excess grease after browning. Add BBQ sauce. Lay out two strips of heavy duty foil crossways, long enough wrap around your pot. Put hot coals in center of cross. Place dutch oven over coals. Put hot coals on top of dutch oven. Let meat cook slowly and coals burn down before going out for your afternoon hunt. Try to cook at approximately 300 degrees. When your ready to go hunt bring the foil piecs together covering the dutch oven leaving a little air space on top and keeping the heat source inside the package. You have literally built yourself an oven around your dutch oven. The wind will not cause sparks which could result in a fire while your out and the oven will slowly cook the meat while you are on your stand. When you get back to camp the meat will literally fall off the bone. You might try this at home before you take it to camp. Your wife and friends will love you for it. Practice with your dutch oven like practice with your bow before going to camp will make you a better than average dutch oven cook. Good luck. E-mail me if you have any questions.   :thumbsup:

Enchilada Pizza - Crisco the oven and pre-heat.  Take a packaged crust(the kind you have to mix w/warm water) and mix it up let it sit a few moments and smoosh it into the bottom of the oven with a little lip for a crust.  Lid on and cook till it begins to brown.  Put jalopeno peppers, green peppers, onions, canned chicken and colby cheese(in that order). Then poor enchilada sauce over the top.  Put lid back on and cook.  

I do this camping with the dutch oven that has a lipped lid and legs so that you can put coals on top as well as below.  Turns out great.

Also do not forget breakfast - Preheat oven with coals on top and bottom again and then add tube cinnimon roles to the pan.  Close the lid and bake.  Super simple and a taste treat in the back country.

Just did some venison roasts today.  I started out with two 2# rolled venison roasts, i sprayed a 10" dutch oven with pam and added a quarter cup of water then the roasts. I put in a little beef base 1/2 teaspoon, pinch of italian seasoning, sprinkled on some meat tenderizer, sliced up 1/2 onion into rings and placed that on the meat. I then added carrots and potatoes cubed up, put the lid on and set it on about 25 briquettes, after an hour i added 10 more briquettes around the side of the oven. I let it cook for 2 1/2 hours It's real good.

OK, here are a couple of things I had my Wolf Scouts (7 and 8 year olds) cook for us at the last campout.

Camp Chili: 2lbs ground beef (or venison) (browned), 1 can tomato paste, 1 can of diced tomatoes, add 2 cans of water, mix everything up, spice to your taste with chili powder ect. heat it up and enjoy.

For dessert: 1 can of pie filling of your choice (I like apple) pour it in the bottom of the oven (line the oven with foil for easier clean-up)take one box of yellow cake mix, evenly pour it on top of filling. Dice up and evenly distribute one stick of butter on top of cake mix. Apply 4 to five coals on the bottom and the same on top. When it smells really good, its done!

Like POBOY said.

Just something to add. In our troop. 281 Ironville,PA. We use the same dessert recipe. Put six eight small stones same size on bottom of dutch oven and then put a aluminum pie pan at the bottom ontop of stones. Put recipe in pan cover. 12 briquettes under oven 12 briquettes on top of lid. Turn every 5 min. Turn three times.
Chain all kid under 11 to tree.

Dutch Oven Hot Chili Recipe    
This Recipe is meant for Boy Scouts.
Decide for yourself if it is appropriate for your younger scouts or not.
Ingredients: 1lb. lean ground beef
1 small onion
2 cloves garlic, minced
3 jalapeno peppers, chopped fine
1tsp. salt
2Tbs. chili powder
1/2Tbs. cumin
1/2Tbs. oregano
1 can tomatoes (20oz), chopped
Notes: main course
Instructions: Brown meat, garlic, and onions.
Stir in peppers.
Add all ingredients.
Cook covered for 1 hour.
Put on trypod 1 foot from flame/coales cover lid with briquettes before you leave to hunt. "not a good idea in bear country".

Enchilada pie
one lb ground turkey or other meat
mild taco seasoning
1 can chopped olives
1 med. yellow onion, diced
3 lg tomatoes, sliced
1lb jack cheese
1lb cheddar cheese
flour tortillas bigger than the oven

Brown & drain meat with onions, add taco seasoning per instructions, add olives.  Remove from dutch oven, place flour tortilla in bottom, add layer of meat mix, tomatoes, and alternating slices of the cheeses.  Repeat until oven is full, place over low coals (don't overcook!) on both top and bottom.  When cheese is bubbly, it's done.  Serve with sour cream, refried beans, salad, and a decent Mexican beer!

A 10-inch oven full of this stuff will feed 6 guys.
