I saw this recipe on another site and gave it a try. YUM! It was so good I thought I would share it. Thanks to Cecil Fink ("Fuzzy")
Here goes:
1 Medium onion, chopped
1 stalk celery, chopped
2 pounds venison burger
1 teaspoon Tony Cachere's Cajun seasoning, (or 1 pkg Taco seasoning)
3 cups cooked white rice (see rice package for rice cooking instructions, do not add butter or salt when cooking the rice)
1/2 cups (dry) mashed potato flakes
1 cup grated cheddar cheese
1 tbsp olive oil
1 tbsp butter or margarine
Peel, chop and Sautee 1 medium onion and celery in a large cast iron skillet with 1 tablespoon olive oil
Add 2 pounds venison burger and brown lightly, do not drain (optional), add seasoning and stir
Add one cup of beef or chicken broth (or plain water) to keep from being too dry. I tried a can of chopped tomatoes)
Stir in cooked rice
In a separate bowl, mix potato flakes with enough hot water to make a thick paste stir in 1 tbsp butter and 2/3 of the the cheddar cheese
Place meat/rice mix in casserole dish and spread the potato/cheese mix in a thick layer on top. Sprinkle the rest of the cheese on top and brown in 375 degree oven 20-25 minutes or until cheese melts and potatoes start to brown a bit
Serve hot...a "one-dish meal"
