Piece of cake... I had to build "homemade" in order to make deer summer sausage.  My fancy smoker I just could not get "cool" enough.. I needed 160* so I made my own..  NO cost what so ever.. I had all the parts or pulled them out of a dumpster at work.

Fancy is fine for roasts, ect. but just too hot..

For Sausage I made my own..  Heat source is a single burner 1# propane stove.. Burns over 9 hours on a single 16oz bottle...

Inside pic.. I used XX75's to hold the rack just because.. I will hang the sausage fromt them when making a run this fall..

John - is that galvanized?  Be careful with that if it is.  Does not take much heat for galvanized to give off toxic fumes.  Other than that - sweet setup!

Bobby I worried about that a bit as well.. But this will never get more than 180* at the most.. Too cool a temp to worry about.  I could have built this out of a big cardboard box or even a plastic trash can..

I just finished a UDS this past week and cooked like a mad man all weekend long. I'm very impressed! This thing holds temps rock solid and burns very little charcoal. I did a 6 hour test burn and smoked a 4# boston butt and a 5# rack of spare ribs and burnt less than 10 # of charcoal.About 24 hours of actual burn time.

Next weekend I plan on smoking up a couple of wild hog shoulders. I have high hopes after this weekend.
