Viking Chili

Got a roast left in the freezer you need to use up?

Viking Chili

1 ½ or 2 pounds venison – cubed. (Cut against the grain)
Marinade in prime rib seasoning. Brown in oil.
In large pot add:
1 can black beans.
1 can red beans.
1 can diced tomatoes.
1 can tomato sauce.
1 can corn.
1 can water.
Add all fluid in above to pot - do NOT drain cans!
1 packet chili seasoning.
Add extra chili powder, garlic powder and red/black pepper.
Bring to boil and add meat.
Simmer 1 hour.
Serve hot and cover with diced green onions and shredded cheese.
Garlic toast/bread sticks on the side.
