Dang that sure looks good! Neck is one of my very favorite parts of a deer.
Try seasoning it in your flavor of choice, brazing it in a cast iron pot or pan then put it in your crock pot with a chunked large onion, some mushrooms, some salt and pepper and just about enough water to cover it but not quite. Cook till it's falling off the bone.
Take it out and debone it then put the chunks into a foil roasting pan and pour broth from the pot over it until you see liquid coming up around the chunks about half way. Put it in your smoker or even a charcoal grill with indirect heat and throw on some smoking wood chunks of your choice. Smoke for an hour or two stirring a couple times to redistribute the broth and meat. When you have as much smoke flavor as you like, take it out and make sandwiches on a good toasted roll like you would with pulled pork, add your favorite sauce (I like KC Masterpiece original best) and maybe a little slaw or pickles with a cold beer or coke on the side, maybe a plate of home made fries....MMMMMMMMMmmmmmmmmm MMMMMMMMMMM!
