I worried about how i might make use of Javelina meat. After all these critters smell like a skunk.
After removal of the hide, the meat was very clean looking and odor free....Hmmmmmmmmmm
I saved the meat and head from my Javelina.
I boned out the meat and ground it up with a course grinder head.
I used High mountainJerky Cure and seasoning brand. I chose the mesquite flavor and added a bit of course ground black peper. I followed the directiond for ground meat jerky and marinaded
the meat for three days.
I used a jerky shooter and a dehidrator and the jerky is of the best I've ever tasted.

If you are worried about Javelina meat use or don't care to eat it conventionaly....Make jerky out of it and tell a hunting story over a few beers and some great tasting Javelina Jerky..........
