Tough Meat recipe

Thought I'd share one I like to use for just about any tough cut of meat.  I've used it for lamb, beef short ribs, deer shanks, etc.

Ingredients:
1lb meat
1 large can whole peeled tomatoes
1/2 onion cut into slices
2 bay leaves
3 cloves garlic
1tsp red pepper flakes (optional)
1tbls dried parsley

Preheat oven to 450deg.

Pat meat dry and season as you see fit. I typically use salt, pepper, onion powder, garlic powder, cayenne and paprika.

Rub a small amount of EVOO onto meat and place in oven safe dutch oven dish.  Place a few large chunks of bacon around meat (I make my own, but a single slice of thick cut should suffice).  Put uncovered into oven for 30 minutes.  After the 30 minutes, add onion and return to oven for up to 15 min.  Watch closely to prevent burning.

Remove from oven and lower temp to 325.  Remove meat and add just a bit of juice from canned tomatoes, scraping up any lil bits until blended.  Crush tomatoes by hand into pot, add bay leaves, garlic, parsley and red pepper flake, stirring to combine.  Return meat to pot and place back in oven covered for 2 1/2-3 hours.

Serve with your favorite starch, I like egg noodles, red skin mashed taters, or rice.
