I'm looking into buying some flat stock and wondering what thickness you guys would recommend.

well, what sized knife are you wanting to make???

for everything but really big or really small i will use 1/8.
anything can happen on a texas friday night, if you dont mind your manners you dont mind a fight

Mid size knife, 6-9 inches overall.  Grinding.

No need to go any thicker than 1/8".  3/32" would require even less grinding.

on the other hand, if you are new to stock removal, you may want to stick with 1/8 in order to have some "fudge" factor.

The master bevel grind on a knife, if you are like me at all, is a real challenge to get even on both sides...having a little bit of extra metal "in case" is often useful.
