Old Knife to New Knife?

Hey guys,
I'm not a knife builder, but I was wondering about taking an old knife like an old butcher knife or something similar and cutting it down to a usable size and add some new handle scales. What do you think?

I think that would make as decent knife I called them CheatR knives when I use to make them like that.<><
