Thunderstorm Mini chef
« on: May 21, 2013, 07:33:00 PM »
I just finished up one of my mini chefs, and I thought I would share.
It is 5" utility size chef knife, with a .095" 15n20 blade with a hand rubbed finish. The handle is Thunderstorm kevlar, with black and red liners. Let me know what you guys think.

Looks great.  Is that a single bevel blade?  I've been wanting to try a chef knife.

Another great one Ben.  I like the kitchen knives because they get to see daily use as apposed to a few times per year with the specialized hunters.  Are you using this yourself?  How is the 15n20 holding up as a mono steel blade regarding edge retention and so fourth?  I have made a few with 15n20 in mono and as the business portion of a san mai but have not had the opportunity to test over a long period of daily or "often" use that a kitchen tool of that caliber would offer.  Just wondering out loud how well you find it performs??

In my opinion 15n20 is one the best/most durable carbon steels out there. It holds its edge forever and is super durable even in thin cross sections. I think L6 or 8670m (admiral's equivalent)is a good alternative and is available in thicker sizes.

I have just about a lifetime supply of L6/8670M in the form of 24" circular saw blades and it is what I use for almost all of my utility knives, hunters and everything in between. I love the stuff.
