been seeing these shows on discovery channel about guys logging in rivers and lakes pulling out old growth logs and i'm wondering if anyone is making bows out of this stuff and where a fella could see any if there are any.

I don't know anything about that in particular but I've heard many years ago from a source that the some of American Indian tribes would submerge their staves in water for a year or two to store them before making bows from them.
