When taking the bark off Osage do you have to take all the sap wood off before sealing?

I have sealed staves I was in the middl eof getting chased but got right bck to them the next day or two.  Whatever you do, do not leave sapwood on debarked green staves without sealing with shellac, even overnight.

No.  Too muddy!  I did get some fresh hedge in trade from a fencing crew.  One tree weighed over 400 pounds!  19 staves though  :)
