If I don't want an I beam to show in the arrow pass, would it be ok to laminate it off centre in the riser? I have 2 risers that are 1 1/4" thick and I want to add a 1/4" I beam to bring them up to 1 1/2".

You can do it that way- no problem. It will show on the belly side of the grip. I've seen a few done that way and they look good.
