They are very good...fried, sauteed, Gumbo, Etoufee, grilled...basically any way you cool fish you can do with ray.
The Southern ray is the best to eat with its sweet white meat. The Cow Nose ray needs to be put into Gumbo, or Etoufee IMO...I do not care for it dark red meat cooked on its own.
The only way to eat Mullet is fresh...we never freeze them and always cook them up the next day.
