I have been going to west Texas for 15 years hunting javelina. They are the perfect bowhunting game animal. Also gets us out of the cold winter for a week. We have shot a lot of them and find the best is to just bone out the meat - usually get about 10-12 lbs of meat them bring it home and mix the same about of good ground pork with it 1:1. Then add spices and mix. Test a small amount while mixing - make a patty and fry it and taste. Add any spices. When satisfied we take a green bean can or something of similar size. Remove both ends and fill with meat, then push out the meat and double wrap with Suran and freezer paper. This usually makes about a pound of meat. Use it anyway you want, depending on how you spiced it. Chili, spagitti, breakfast sausage, mexican food, etc. Straight javelina meat is pretty nasty, but adding the pork and seasoning make it really good. We make a day of it - all of us that hunted, grinding the meat, mixing the pork and seasonings and wrapping. Fun times.
