I think most of the hybrids and 3piece T/D's are cut to center. I know the Centaurs are.

There's a lot that are cut to center, and some bowyers will cut them past center if asked. "Center shot" is going to depend on what size arrow you use. One thing to consider--if you shoot in tournaments, it won't be legal for the longbow class at most of them--especially the larger ones.

About an eighth inch on glass laminated bows. Selfbows may not be cut in at all or only a little. Most older and many current glass laminated longbows have smaller risers and cutting them to center would weaken them too much. The newer hybrids often have pistol grip risers that have a lot more wood through the arrow shelf area.

Hill Country makes them and Roman makes some pretty bows that shoot nice. I will be taking mine turkey hunting here next week. You can see them at tollgate archery's web site.

Most of the ones that aren't cut to center or past are cut 1/8" shy of center. This is for strength, and a lot of tournaments require this to compete in the longbow class. A strike plate will generally fix this if you want to make a bow cut to center legal for competition.
