Tim,
The one problem with turkey (bird) bones is how thin the bone is. So I forged a spike to nearly fill the bone marrow cavity and then filled the cavity with JB Weld. Thus trying to eliminate any space in the hollow cavity and have a solid piece of bone & spike. Here is my Turkey Neck Knife with orange Kydex sheath...very safe and easy to find if laid down in the leaves.

Those are great knives. First time I have seen a turkey leg used for a knife handle. Where have I been?
