Care and Processing of Venison 2nd edition, by Bill Hesselgrave. Bill shows how to bone out a dear and shows what to look for in CWD. I bought it at G*!der Mtn.

I'll second Rob's choice here. Utterly enthralling (If you like that kinda thing!) From field to freezer, very well explained. It's almost worth having a DVD player in your prep area, just to use this as a real-time tutorial!

Not only shows you how to field dress and skin big game, but it also includes instructions for quartering an elk.

hey guys, Merry Christmas. We got the dvd by outdoor edged, vol 1 with Brad Lockwood. My dad got 3 and gave me one as a gift. I thought I knew it all, but this(3hr)dvd was a really great watch. I can clean a dear and have it hanging in the cooler very quickly(maybe 10min max if its not a trophy) ,but I did learn quiet a bit about the whole operation by watching this film. Not too old to learn a few tips that I always needed to know.don
