Darn - I'm feeling myself being drawn back to the uncomfortable position of sitting on the fence (with exceptions made for buffalo, bulls, and camels, in which case I am a staunch 2-blade enthusiast).

Ben - I think there maybe a place for a tuff two blade. I don't think I am gonna shoot anything in that category.

Rusty, I reckon a bull could weigh about 700 to 800 kg, possibly 1000 kg if they were tanked-full of water.

Here's a pic of a bull I took a few years ago. What weight do you reckon? Sometimes I'm a little out with my weight estimation (I get a little excited and generous)!

I have no exp. on Elk, but I have taken a few doz. deer w/ 2 blades and 2blades w/ inserts (Bear Razor)  May experience mirrors yours-- better B trail w/ 2blade + inserts.  I used the Bear Razor, but I sharpen the Inserts.  All this said I do love those 2 blade Zickweys.
