GPS/ UTM???

This will be my first year trying to use a map, compass and GPS all togethere....
Well I marked of my Quad map using the UTM grid and even ordered the little UTM grid tools for the map.
Now I need to figure out the UTM on the GPS???
I set the usage to UTM and the NAD27 for that map.. Now  Do I set the Compass on there to true north, grid north, or magnetic north if I'm using the UTM?????
Also I have an older garmin that changes the locations from Long./Lat to the easting and westing of the UTM. But on my New Magellan even after I change to UTM all the readings on the things still are labeled Long./Lat.???
