I think you have some options. If you are going with the Wesley Special, I would go as long as you can. There's quite a bit of taper in those limbs. It makes for a sweet shooting bow but with a draw at 32" long, you'll need the 72" to prevent stacking. If you don't mind a bit of stacking, you can go shorter.
If you choose a bow with fewer tapers you can go shorter. Bows with less tapers tend to make the inner limbs work a bit more and allow longer draws for the same length.
Either way, I suggest getting a bow with tip overlays with rounded string grooves and using a Fast Flight or other low stretch string. In my experience building bows for the last 10 years, Fast Flight string when used on a well built bow makes for a quieter string that doesn't slap your wrist. It also doesn't hurt that they shoot a bit faster or allow for a heavier arrow. And they are more durable. The skinny strings really don't make Hill style bows much quieter.
I've been pretty impressed with my Wesley Special T/D. It seems to shoot my 11-12 gpp arrows pretty fast. I got the bow as a blank and put my own tip overlays on them. Here's the bow:
