What height should the nock be set at when shooting a split finger bow 3 under? Thanks

Depends on the bow and tune. There isn't a specific number for everyone. I like to start with the arrow parallel and then work up. Ask the bowyer for a reference if your having a hard time with it. My bowyer recommended a really high nock point for my bow. I think I'm at 1/2.
If you can see your arrow pointing up as it moves to the target then your nock is too low. It is easier to see with a bareshaft.

I don't shoot three under, but all of my bows, the nock height is 5/8" high off the shelf.

Proper nock height will depend on the individual shooter. Tuning will let you know where it will work best for you.

Shooting a Split Finger Tillered bow Three Under typically requires up to a 1/4" higher nock height from my experience. Most of the time I have only had to raise nock 1/8" higher than what the nock was set at to shoot split finger.
