Check out   http://www.big-antler-outfitters.com/  I have only bear hunted with them but have seen some monster racks there.

You will get excellent and highly conscientious service from Ryan of Stickflingers Manitoba Bowhunts.  He is very a very knowledgeable and accomplished bowhunter who will do his utmost to set you up with the best opportunities he possibly can.  It's best to book with him as early as possible since he takes on a very limited # of clients each season.

I would also highly recomend Ryan at Stickflingers. He knows his stuff. He's a dedicated compound shooter now, but he started off trad, and knows what it takes. Lambleys would also be a good start, heard many good things about them as well. I'll send you a PM about one to definitely avoid though.
Maybe Darren will chime in on this one. I know he picked up 8 tags this year around Riding Mountain. He'd be a good guy to go with as well. He's probably out guiding for bear right now though. He's a die hard trad shooter, and hangs out on this site as well.

overbo, there are some pretty impressive deer in the red river valley, good numbers of deer without having to hunt heavy bush. agricultural fields with oak and elm bush following the red river. ryan hunts the south as well as the north of winnipeg. buddy  shot a 170 class on his first evening of hunting and a 189 class buck was shot near morris.myself, i saw three bucks in the 150 range and one in the 170's. give the province a try you won't be dissapointed.
