Venison question

Hey gents,

This past yer has been a trying one for us which has kept me off tradgang for a bit. But now that the good Lord has blessed me with employment next year (I'm a teacher) we are breathing again and I've had a little time to get the bow out. Which all got me to thinking about a few things... One of which is September, when bow season opens... But before that I have one last package of venison from 2009... My question is, how long is venison good for if frozen? This meat was sealed in a foodsaver vacuum bag upon butchering and frozen.

Thoughts on safe to eat?.

Vac sealed venison will keep for well over a year without any problem.As long as it looks ok and smells ok, I'd fire up the grill!

It should be fine! As long as there's no freezer burn I would eat it.

Glad to hear things are making a change for the better.Vac sealed I think is the best way to keep food for long term.I am with the others on here, I would eat it.

Its fine, they ate some stuff that was frozen in the tundra, wooly mammoth and some kind of fish that were frozen for a couple thousand years and they were fine. The only thing that I ever notice is that the longer its frozen the less the taste, so you might want to use it in something with a bit extra seasoning. Oh yeah that stuff they ate from the tundra, they said it didn't have much taste either!

It's still good. A few years ago I had some that was slightly freezer burned and I just cut the really bad stuff off and made a stew and chilly with the rest.

I've eaten venison close to four years old. If well wrapped, even butcher paper will preserve it surprisingly long. Trim off freezer burn if any and go for a flavorful preparation.

I'm thawing the last of my 09 venison right now for dinner tonight. Vac sealed and no freezer burn. I don't notice any difference.

I will say the same thing.  I have eaten venison four years old but have only used my vacuum seal bags for the past two.  I just grilled some meat from 1 1/2 years ago and it was fine.  I normally eat it faster than this but it was hidden below newer meat and forgot about.

I had fried backstrap tonight for supper.1 pack was 2009 and the other was 2010.double wraped in freezer paper and they were great.   :bigsmyl:

I just finished the last package of my 09 deer that was vacumn sealed and it was great. No problem with mine.
I would've taken better care of myself,if I'd known I was gonna live this long!

i'm still eating on 07 meat that is vacuum packed with no ill affects.

Erik,

What they all said, you should be fine.  If there is a bit of freezer burn, some times you can even thaw slowly, then cut out the bad spots.  However, I doubt you will have an issue.

Congrats on teaching again.  Good on you buddy.  I hope you have a great school year starting this fall.

Freezer burned meat isn't bad for you.
Just might not taste great or may have a bad texture.

Bottom line is if the meat was stored and kept well frozen and the meat was fine when it first went into the freezer all should be fine.

If you don't have too much burn just trim it off and enjoy!

2 years no problem. Mine are wrapped in cellophane to seal out air and overwrapped with freezer paper.

Agreed.  I used to overwrap mine in paper before I started vacuum sealing.  2 - 3 years no issues if you don't try to pinch and save that little bit of freezer paper.  Chest style freezers have a way of hiding things.
