The best brace height is where the bow shoots the best.
Seriously, brace heights are just reccomendations. You need to find an arrow that shoots well and play with brace height until everything clicks. I'd start around 7", 7 1/4" and move up from there until things quiet down and she sings for you.
As for the twist, I've straightened a few Bears out by using hot water from the bath tap. Get the water running hot, turn on the cold water in the sink, run the hot water from the tub over the limb for maybe 30 seconds, torque it the opposite of the twist by hand ( and go past center, it will spring back ), then hold that position while running the cold sink water over the limb until you think it's cooled down. Release, string and see if you need to do it again.
