They taste like faty pork... A tric to dress them up is first( if you don't want to keep the quills), you make a fire and passe it into the flame to burn the quills(hairs) and them you can proceed to the skinning.
a long time ago, when in school one of my teacher's past student got a porcupine and was realy careful on the skinning, with the well dressed skin, he made a "nice" cushion for his mother in law....

My friend owns a bunch of property we hunt in Northern Michigan and has a moritorium out on porkies - he kills all that he sees because of the damage they do.
I always felt bad because they just wobble along and really bother nothing(other than trees) - That was until I almost lost my dog and spent a boat load of money on 3 surgerys to get thousands of quills out of him!
I know, I know, it is the dogs fault and I understand that but he is as close as I have to a child and I cannot help but resent the porkie.

There are a ton of porkys here in PA., especially northeast. My lab has taken some quills when grouse hunting a few years ago. I'd love to extract some revenge.
