You really need to try a Toelke Lynx.

For $800.00 you can get most anything you want from the classifieds and generally not loose anything if you decide to re-sell.  My favorite TD recurves include Blacktail, Schafer Silvertips, and Dale Dye.  On my wanting to try list, RER, Robertson, Stahl.  There's a nice used Stahl in the classifieds now.

How about a Wes Wallace Mentor? Another fine take down recurve and it comes in 60", 62", 64" and 66" lengths.

I have, have had, and am familiar with several different Custom 3 piece recurves... I shoot and hunt with the 62" Tall Tines and my 56" static tipped Qwyk Styk most often.. Both are charcoal riser and black glass bows  with a matte non glare finish, and are extremely high preforming, quiet and stable bows, which I prefer when hunting.   ;)

The bows by Bob Morrison, the`Schafer's, as well as Blacktail's are also excellent, but usually not found new within your price range.   :wavey:

Fedora for sure should be on your list.  The fact that you hardly ever see them for sale used would be a good indicator.

X2 Wes Wallace Mentor. You should shoot one and see for yourself.

Dan Toelke's Curlew or Lynx take-down are in your price range new. They are flawlessly built of beautiful woods of your choice to your specs and are extremely well mannered shooters by any standard, especially quietness. I shoot Dan's bows and have never waited over a month for a bow to be delivered from the day they were ordered. Go on  www.montanabows.com  and take a look.

The Hoyt Buffalo is a great shooting bow and can be had for a little over half your budget on the used market.

The other consideration is an ILF rig. You can go with wood, metal or phenolic on the riser and get some limbs in the right poundage. Can be shot off the shelf or raised rest like a feather rest. New or used they are a great buy.
