I don't think 4# makes any difference at all at normal hunting distances.When you're cold and tired the last thing to worry about is struggling with your bow.Check the 45# bow thread. Guys are killing elk and moose with those. 51# is more than enough.

Shoot the 51# bow for 15 minutes straight and then shoot the 55# bow for 15 minutes. Your shoulders will tell you which one is better for you.

As for game, the 55# bow is a very good poundage for elk, but how many times do go elk hunting versus deer hunting?

If it was me and bowhunting for deer is what I target in the Fall, the 51# bow would be my choice between the two bows.
