Appreciate the fine comments. I took the legs and made them osso bucco style. A recent article in TBM got me interested. Here's my own take, using cream cauliflower instead of potatoes and some steamed asparagus. Fits my diet plan for losing weight with a trip to BC looming in Oct for some high country ungulates! By the way, those jakes are fantastic eating  :)
