Kyle, yes you can serve on the bow.
Either end to start, and wrap in the direction of the string twist.

You can serve the string on the bow. I've tried serving in both directions many times over the last 20+ years, I can't tell if it makes a difference, but I usually serve mine on a stretcher.

I always turn the thingamajig away from me and start at the bottom so the wrap is moving to the right. I'm right handed and that just seems natural. Could just as easily start at the top with the bow flipped over.
I do Go with the twist on a Flemish splice but serve endless with no twists in the string.
You could probably do everything the opposite of this way and be perfectly fine.

Serve same direction as the string twist, when I draw and release right handed the string may roll right, so right is right for me. I start at top and serve down to bottom of grip. Look at the how to section, must be several videos in there.

I always serve with the twist. I can't scientifically say it makes a difference, but I can say it's what I do and have never had one mess up so I'm going to keep doing it.
As long as it's with a quality serving and tight, if shouldn't matter.
