A few of you have already mentioned this already. I butcher and bone out all of the venison, first. Then I wrap it in Saran Wrap--not the cheapy wrap. Then I use Reynolds Freezer paper--white--and tape it up. It can last for years, although I try to rotate it out... ALSO, I have a manual defrosting freezer. It is a pain in the butt defrosting it about twice a year, but it does a great job keeping the venison, fish and veggies in great shape.
