Hi Mitch-in-NJ: Not sure what to tell you about the first problem, except you might look for just a little bit different anchor.
I do have a suggestion on problem #2, I have shot with tabs for years, and had torquing problems with the string also. I swiched to a Cavalier Cordovan tab about 7 months ago, you can see an excellent pic on 3 rivers archery, one of the sponsers on this site. it has a metal plate built into it that insures perfect string alignment on every shot, and also cures that twisty feeling you describe.
It will take at least a month of serious use though before it will begin to feel normal, it is really a different feeling tab, but once you get used to it, it eliminates so many problems with your drawing hand, and eliminates so many things that you now have to think about using a regular tab or glove that it will be well worth the time it takes to get used to it. Once used to it, it will feel completly unnatural using anything else.
You can shoot split finger or 3 under with this tab, and it works excellent using the second finger joints deep hook, which further helps you to relax your tab hand. I anchor with my thumb knuckle on the very back of my jaw bone (and use the thumb piece on the tab) With a second anchor lips touching feather. Hope that helps.
