I killed a nice gobbler Wednesday with a shotgun & here is my "traditional" way of preparing the breast. I do it the same way every year & it has become part of the hunt to me.
Cut breast into 1/2-1" strips cutting with the grain.
Soak submerged in milk for 20-30 minutes.
Drag strips through egg wash (2 beaten eggs).
Put 4-6 strips at a time into a plastic bag containing seasoned flour & shake until well-coated.
Fry strips at 375 degrees in a mini-kettle for 4-5 minutes until just golden. You can also pan-fry, turning once.
IMPORTANT!!!! DON NOT OVERCOOK!!! THE WILL GET TOUGH!
Eat with fingers, dipping strips into honey (my fave), BBQ sauce, ranch, etc.
Leftovers make a fine breakfast meet with eggs over easy!
