Sweetbreads a la Danny

Parboil a large sweetbread and cut in eight pieces. Cook in hot frying pan with a small quantity of butter, adding enough beef extract to give sweetbread a glazed appearance.

Cut bread in slices, shape with a circular cutter three and one-half inches in diameter and toast. Spread each piece of toast with two tablespoons grated Parmesan cheese seasoned with salt and paprika and moistened with two tablespoons heavy cream. Arrange one piece of sweetbread on each piece of toast and season with salt and pepper. Put in individual glass covered dishes that have two tablespoons cream in each dish. Cover each piece of sweetbread with sauted mushroom cap, put on glass cover and bake in a moderate oven 8 minutes.   :D

If I am not mistaken it is the pancreas.

Good Lord, Danny! What a goin away present!  :D  

I was checkin one last time afore I close up shop since I'm headed out tomorrow for a shoot and then Sunday leave for a work thing for a week..I'll be off line for 7 days and am having an anxiety attack!

When I saw that cooking receipe for Sweetbreads popped up there, I about had a cow!

OH, Danny, Boy... Van's gonna quit likin you!

BTW, I mentioned Sweetbreads on aonther thread and ole Killdeer jumped in cause I admitted I had to ask my 82 year old folks...they said "pancreas" and Van and I have been bantering that about since.

Killdeer went to a search engine and it came back saying it's calf, pork or veal thalmus gland!   :eek:    Good Lord! That don't sound good at all!  I'll eat guts, but not them nervous system stuff w/prions in em!   :D    :bigsmyl:  

My young buddy from near by posted back I'd best quit eating scrapple then...   :eek:    "[dntthnk]"  

Oh, well, gotta die of sumpin!

Saw youse a "student" Arrowflinger, well, one thing learned by my generation about the depression, apprently lost on the younger one today is, "Waste not, want not!"    :bigsmyl:  

Hard teachin us old dog new tricks... but it's all good.  I wouldn't eat "biled okra" if I were starvin...  :eek:  looks like a bad cold in the mornin!   :bigsmyl:

I have had 'em grilled, and they are good.
It's all on what you grewup with, I love menudo too, have it everytime I go to south Texas to visit my mom.

I thought Sweetbreads were the salivary glands. But I have had them grilled and they are pretty good with tortillas and cold cervesa.
