I have never use beef fat on these three recipes but I guess it would work.

Deer Brats
15lbs Deer meat
10 lbs pork timmings
¾ lbs nonfat dry milk
½ cup salt
3 eggs
2 tbl spoons sugar
4 tbl spoons white pepper
3 tbl spoons powered onion
1 tbl spoon ground mace
1 tbl spoon ground ginger
1/8 cup tony chacharels Cajun spice
½ cup fajita mix
2 qts water
