Cooking fish on a Plank

Had a chance to fix some Salmon on the fire. I've been wanting to try the plank cooking method.

I have Catalpa and Sassafrass, so split out a piece of the Catalpa and shaved down a split.

Wow, my wife doesn't like Salmon, but does like most fish and seafood. She really liked it! Me too! Now I want to try some other species.

What have you cooked? And what type of wood?

Hi Frank,
Salmon, sea scallops, swordfish and grouper.
For woods, cedar, apple, sassafrass soak wood for 30 to 40 minutes.
If i am using a lean fish I will put a little oil on the fish them on plank. For fattier fish just put it on.

Hey Chefpaul, thanks! Scallops, my wife says yes to that!

Yes, I soaked my plank for about an hr or so. The salmon was marinated in soy sauce, olive oil and a little lemon juice for about an hr also.

It's all goooood!  :thumbsup:

Salmon on Cedar Plank:
In a sauce pan melt 1/2 stick butter and add:
3/4 cup apricot preserves
1/2 cup brown sugar
1/3 cup lemon juice
2 Tbl Worchestershire sauce
2 tsp dry dill
1/2 tsp salt
soak cedar plank 2-3 hours in water, dry with paper towel. Lay salmon filet skin side down on plank. Coat with sauce. Place on BBQ on med high with lid closed for 10 min. Baste again w/ sauce, cook another 10 min. Leave fish on plank and serve. Bottom of cedar will turn to charcoal and smoke fish, moisture  from wood will steam fish.
