Venison & Beans

6 slices bacon
1 1/2 pounds burger
1 medium onion - chopped
1 can (16-oz)pork & beans
1 can (16-oz) kidney beans - drained
1 can (16-oz) butter beans or Great Northern beans - drained
1/3 cup packed brown sugar
1 cup catsup
2 tablespoons vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon prepared mustard

Heat oven to 350 F
In a Dutch Oven, cook bacon over medium heat
Stir occasionally, until crisp
Remove bacon with slotted spoon: set aside
Drain all but 1 tablespoon of the bacon fat from the Dutch Oven.
Add meat and onion
Cook over medium heat stirring occasionally, until meat is no longer pink and onion is tender.
Add reserved bacon and all remaining ingrediients to Dutch Oven and mix well.
Cover and bake until bubbly around the edges - about 45 minutes.

This is a great dish to take to a pot-luck supper.
It's another way to enjoy your venison burger.

the only problem is I would need to use 4.5 lbs of burger, because I can eat almost a pound by myself!!!

Another optional ingredient for this recipe - can be Tobasco sauce.  If you like it.
It goes good with the flavor of the Worcestershire sauce.
How much ?  Well I just sort of add Tobasco until my eyes start to water a little bit - then I figure that's enough.

I took the receipe with me to the TBOT shoot in Vanderpool and cooked it up on Saturday night, The pot was drained by all of those present. Only the pot licking left.(I guess you could say it served 8)

Chinook, thanks for the Vension & Bean recipe.  I think I will give it shot this week since I just grinded some left over venison this past weekend.

WOW...This was simply the best baked bean recipe I have ever had.  I made a double batch, a single just wouldn't have been enough ( I love left overs).  My wife and sons (6 and 4) loved it to.  I took over two bowls of it to the neighbors, just so I could have an unbiased opinion, and they sent their son over for the recipe.  I would have to say this is a winner.

These are great beans.  Give them a try.  I just made a pot.  I only had one package of ground venison left, and one package of stew meat.  So I cut up the stew meat pretty fine and used that, too.  I added a little bit of Tabasco, like Chinook recommended.  But only a little.  And about a half teaspoon of good, smoked paprika.  It'll be better after sitting over night while the flavors blend.  This recipe is a keeper and it looks like I have lunch for the rest of the week.

WOW!!!  These are awesome!  Even my picky eater wife loved them, only thing I did different was to use Bison burger add some garlic, and I left in all of the bacon fat!  Wonderful   :bigsmyl:
