Curry Jack Rabbit Stew..

Hey below is one of my new jack rabbit recipes. I'm going to school at the presetn time so it has been hard to get out as much as I like..
Below is rabbit stew that will make the whole kitchen smell good and your tummy roar..

4 jack rabbits boned out
1 pound of bacon
2 pounds potatoes cubbed
1 pound celery sliced thin
1 pound carrots sliced thin
3 table spoon curry powder
1 8 oz can chicken stock
salt and pepper to taste

Steps...
1. cut up bacon in one or so inch cubes.. then fry this in a stew pot with a little oil until lightly browned.
2. Drain grease into frying pan to brown the boned out rabbit and begin.
3. While browning the rabbit; add veggies and bacon to stew pot with chicken stock and water fill pot to thickness that you like for your stew. Also add curry at this point and salt and pepper..
4. Bring stew to a boil then let simmer until your done browning the rabbit.
5. With the rabbit browned add it to stew pot and let simmer for about 1 hr.
6. Let cool and enjoy.

This is a good way to deal with older jackrabbits that are tough..

Hope you try it some time. Cottontail is to mild a meat and is overpowered by the other flavors.. SO my recommendation is stay with jackrabbit..

Lots of jackrabbits her just haven't had a use for them now maybe I will.

Man, with that recipe, I bet you could even make an 'ol 7-bone roast taste great! I love curried rabbit!

Do you think that would work with goat? Looks like a great recipe.
