I'm making venison meatballs today.
I am using 1 lb bison burger with 1 lb ground pork. I mix the meat together,Add 1 medium onion, chopped fine, fresh ground black pepper, salt, some hot pepper flakes, oregano, garlic, and some dried bread crumbs. I then make the mix into balls about 1 1/2" diameter, put them on a cookie sheet, then into the freezer for a bit. This will help the meatballs stay together when cooking. I fry mine until brown in a bit of olive oil, then add to the pot with my favorite sauce. Simmer in sauce for at least an hour. Serve with spagetti and garlic bread. Yum Yum!
