Want to brine a turkey for the smoker...
«

December 18, 2011, 10:05:00 PM »
Greetings All,
Does anybody have a good brine to use on a turkey for smoking? Am wanting to smoke a bird for a gathering of friends.
Had a good dry mix but the stuff I have left is pretty old and I am in need of a brine I can build fresh.
Thanks in advance.
Happy hunting,
Jason

1 gallon of water
3/4 cup kosher salt
3/4 cup brown sugar
1/2 cup orange juice
1/4 cup worcestershire sauce
2 Tbs. garlic powder
4 bay leaves
Bring the water to a boil.
Take off the heat and add the salt and sugar.
Stir until they are dissolved.
Cool and add the rest of the ingredients.
Put the turkey into a clean plastic 5 gallon bucket.
Add the turkey, cover, and place in the fridge for 36 hours.
Smoke and enjoy.

I'm guessing this would be good for a chicken also? I plan on doing one for Christmas.

That sounds really good. I might try it with some whole chickens.

10-4, good for chicken as well, but only brine the chicken for 18-24 hours.
I forgot to mention, that before smoking or cooking anything out of a brine, rinse it off and dry it before proceeding.
Enjoy.

I use basically the same as Al Dente but I drop the orange juice and use apple instead.
Good luck, nothing like a smoked turkey.

Awesome job. The bird looks amazing, drooling as I write this. Nice butt too, breat looking bark. Got 6 racks on right now, then doing 2 tenderloins when I get to Mom's house. Merry Christmas.

I use 1 cup salt to 1 gallon of water so it covers the bird I will add brown sugar or pepper for taste. Then I will take a marinade and inject the bird all threw it. Brine it for 24 hrs rinse and smoke. The differant marinades will produce some realy neat flavors. Good Luck
