Wife and I usually grind our 4-6 deer a year, and did this year. We don't add any suet, just use it for chili, lasagna, hamburger helper etc. Deer burger on its own, never appealed to me that well as a burger. I killed my first bear this year in Maine, saved most of the fat, and rendered it down making 14 jars, wife and daughter have been using it for baking, works great as shortening. Daughter called and told me I had to mix in some of the bear grease, with the burger, and make grilled burgers. Well I did, and WOW, what a difference! One of the best burgers I have ever ate right behind elk!
