Good luck to you, ALS classes are some of my fondest memories.
Things worth remembering -
(1) When the patient flatlines on the monitor yet is still able to ask you "why is it making that alarm noise?", check the leads BEFORE you defibrillate.
(2) When attempting to treat a patient for a gunshot wound, make certain the shooter is not still there.
As far as a 7-10 day hunt for <$1K, the canoe sounds like a good start. A float trip down the Missouri river or the Wild & Scenic portion of The Buffalo river in Arkansas would be an adventure.
