The rural Japanese knifesmiths leave the blades rough-forged over the edge for a reason. They say the rugged exterior protects the soul of the knife.
I won't weigh in on that, but I do know that leaving the blade rough-forged tells the story of how it was made, and when a knifesmith can leave 'em all to proudle show they've got my respect.
