How to get log milled?

I have a Trident maple that blowed down.  It is covered in small in woodpecker holes.  I don't think I have much of a use for it in making selfbows so I would like to have it cut up for making veneers and riser material in glass bows.  
My question to you  all is this...How should I tell the sawman to cut it?  
I have the means to resaw for width, my main concern is thickness.
