That’s pretty cool!
I just recently did my first Venison Summer Sausage and Bratwurst. It turned out pretty good and I’m looking forward to some future recipes

I had visions of that this year myself, but haven’t had the luck LOL. Still have a couple weeks though. Let us know how it turns out!

Look good Roger! Is it all venison inside or did you do a special mix?

Those do look good! I made some and added a little pork and my own seasonings and then put them in the casings like you did. Mine tasted great but if I grilled them on too much heat they would kinda blow up....the casing would break open and they would double in size in that spot. I may have filled them too tight. I need to try again- they were good

So..........you swept up all the parts and pieces off the floor after butchering a deer and made those???
Just kidding!!! They look awesome! I’ve never heard of that before but would love to try it sometime.

LOL!
I keep trying to post a picture of the cooked product, but I got the size of the picture all screwed up...
They were great, very much like the street brats we used to get in Nurnberg.

Just venison and a commercial "hotdog" spice mix
