Late summer/early fall as the tomato plants start to fall off was always the time to make Chow Chow for my family. For those not in the know... Chow Chow is chopped up green tomatoes, onion and spices, sweetened with brown sugar, pickled and then hot canned. We ate it on everything (crackers, toast, etc.). It is fantastic to add a spoonful to beans to go along with cornbread.
Eric, you have me eyeing my tomato plants in the back yard now... even though we still may have a month of production on our late season varieties I may need to go pick some green ones.
