We had breakfast sausage this morning made from the monster javelina I got in week one. It was great. A big shout out to Ruiz Custom Meats here in Laredo for the quick turnaround making sausage.

Thanks for all the pics, thats some nasty look'n brush ... how are the ticks and chiggers, years ago when I use to hunt down there for javies I got eaten up by bugs and the bites lasted a long time.  :archer2:

Smokin Joe and LTR Squad… I’m planning to cook or smoke at least half if not all of my Week#1 Javelina for Super Bowl Sunday. I seen reference to the breakfast sausage. Any recommendations? James did the Apple cider vinegar which was good. I’m up for any ideas and I’ll post the results :campfire:

Carnitas, brine, stuffed sausage.? I’ve got a smoker, instant pot, grill, grinder, stuffer… :goldtooth: Right now it’s 4 quarters bone in and Backstraps. Let the ideas roll in……… :saywhat: :pray: :clapper: :campfire:

Last year I made jalepeno cheese summer sausage that was really good, this year I got hot pan sausage made. Just got a couple of pieces out of the skillet and it is really good also.

Travis: The breakfast sausage was made by a local meat processing shop, Ruiz Custom Meats. They are now making some Chorizo sausage from javelina for me.

BTW, those *attacks*  obviously were not attacks, but simply javies that had no clue the hunter was there and got drilled. They were just choosing their escape route, and the hunter was in the way...

Snake boots make the prickly pear a better option than the charging teeth.
Quiver looks good!
I can afford to shoot most any bow I like.  And I like Primal Tech bows.

Maybe but if you have good ones they at least help with the pear.  The thorns are a whole other nightmare.
I can afford to shoot most any bow I like.  And I like Primal Tech bows.
