Either of the arrows you mentioned will be way too stiff, even with your 160 grain heads. I am experimenting too and have some Easton Epic ST 400's. Full length with 100 grains of lead inside the front end and 145 grain field tips, they shoot pretty well out of my 51# Kanati and 55# Mahaska. I draw a full 28" though.
The 3555 Gold Tips with 100 grain inserts and 145 grain tips need to be full length too. Cut to 29.5, I had to add weight to get them to tune. Cutting a very little from carbons seems to have a huge effect on them, much more than wood or aluminum.
