Wish I was there to share the hunt, friendship, stories and food.

I've eatin a bunch of javi and can't say I ever had a bad one. Curtis cooks a mean javi, too!

Alls I can say is DON'T EVEN get between JC and I when Curtis puts the   "JAVIE SALAD" on the table.

 Theres a whole lot of Weepin and Gnashin of teeth goin on in that event

Wow, been a long while since I've see some of you. Sure good to see all ya'll's humor is still so good! Killy, you always dole out a smile.

This is ba eatin.  

 

These guys stink when the hide is on them but once over mesquite coals they turn into a fine dinner.

 


Ted and Jesse went coon hunting last night behind the house. There was also a fair chance to run into a hog. No reports this morning yet. Looks like the lights are still out in the bus.

We'll be cooking javi salad later today. I'll do a pictoral so everyone will know ho to fix their own. Be well Gang! CK

Dang Curtis, that looks awesome!!! I have never shot a javi before but have a real hankering to do that. Eating wild game, drinking mexican beer and smoking cigars on the other hand I have lots of experience at!  One of these days I am just going to have to sign up for one of your adventures down there in Texas.
To me, the ultimate challenge in bowhunting is not how far away you can succesfully make a killing shot but rather how close you can get to the animal before shooting.

Hurry up and cook rest of Ted's javi. Smoke it for week or so and I'll be there for dinner! Looks like that 300Xtreme did a fine job on that javi.  :thumbsup:

Did sumbody say "Javie Salad"!!??!! My mouth is watering and my stomach is rumbling just looking at that picture. I'll not forget the tounge-lashing I received after I cleaned out the bowl at a Texas Sweat and someone went to get more..."You ate ALLL of it? Heck, there had to have been a pound left!" I can say with 100% conviction that there wasn't quite a pound.

For heaven's sake, please don't show a plate of smoked javelina sausage...please...please!  :saywhat:

I'm guessing Javi could vary alot on how you prepare it, but I'm willing to bet that Curtis could make a dead skunk taste pretty good.  After Curtis gets done marinating and turning it over some mesquite for several hours it all taste wonderful.

This is JC demonstrating the proper technique and form for attacking a large bowl of javi salad. Notice the firm grip on the pack of crackers, eye's focused dead ahead, non-swaying in his diligent quest to find the bottom of the bowl.


 


Also notice that he had to get his camo on so that he could sneak past the guarding fellow hunters so that he could EAT THE WHOLE DANG BOWL!!! Good to see you JC. CK
