how do you guys serve up your javies?

ive been told there good and ive been told they are innedible!
i want to hunt for them and i eat what i shoot...
any tips on skinning/prepping etc?
any help will be appreciated by my stomach!

By no means and expert but I skin them without field dressing and take extra care to avoid the scent-gland that is on the spine near the hips. I take the front and rear leg-quarters and the back-strap..not much of one.
The best way to eat them IMO is either to have it made it into smoked link-sausage or stewed with onions, chile peppers, spices and a good shot of red wine and serve the stew over rice.
I've tried grilling and slow cooking but didn't care for it that way.

The secret to good javelina eating is proper field care. Make clean quick kills and immediately get the animal field dressed and on ice. Be very meticulous about removing all the glands and keeping the meat clean.
I have eaten it as a roast but Mike's brew above sounds pretty darn good. I would recommend that you shoot only moderate to small javelinas.
At any rate, if taken care of Javelina makes for very good table fare. If you can just get over the initial stink

Javalina is good and easy to prepare. It does very well when marinated in fruit juice (orange, pineapple, papaya, etc) but is also very good if chopped up in small pieces and simply mixed in a large skillet with Taco seasoning (the packets you get at the market). All you need are ethier flour or corn tortillas along with some onions, chopped lettuce, salsa, hot sauce, chopped tomatoes and you are good to go.

I shot one a few years back in Az. and had the whole thing turned into chorizo sausage YUMMMMMMM!!! Good!!

I field dress them just like any other animal, I try to be careful when I do it, but as a lot of you know it's not always the cleanest job, but it will all washes off. But cooling is important.
I have found for me the best way to cook it is in a crock pot untill it falls apart,and any kind of sauce you like, then make burritos out of it.
I like the taste, it's different. About any thing that is worth taking is the hind quarters and back straps, but if you field dress it, you just as well take the loins. Good luck to you , there a lot of fun to hunt with a Longbow, or Recurve.
